Lemon & Garlic Pasta

Ingredients

1 lb. of pasta

2 teaspoons of fresh garlic - minced

1/3 cup of parmesan cheese - grated

1/2 cup of italian parsley - chopped

4 tablespoons of fresh lemon juice

2 teaspoons of lemon zest

3 tablespoons of olive oil

1 dash pepper

Description

Can add seafood like prawns or scallops.

Directions

Cook pasta.

While the pasta is cooking: Mince the Garlic Zest the lemon Juice the lemon Chop the parsley

Once the pasta is cooked, remove one cup of the cooking water and set aside. Then drain the pasta.

Using the same pot, heat 3 Tablespoons of olive oil.

Add the garlic to the oil and fry it, until you can smell it cooking, about 15 seconds. Turn off the heat.

Add the lemon juice and zest to the pot.

Add the pasta back into the pot.

Add the chopped Italian parsley.

Toss everything together. If it seems too dry, pour on some of the reserved pasta water.

Serve with fresh grated parmesan cheese and freshly ground pepper.

Garnish with fresh chopped Italian parsley.
